Beef!

Today I finally got word that the beef will be here in time! We pick up our 1/8 of a steer the next Saturday. Phew! I was starting to get a little worried. We don't eat much beef, but I'm sure an 1/8 of a steer won't be enough since we won't have any pork, which we use a lot of. So that's our next task - to find a pig ASAP. We have grand plans to buy one next spring, but then we have to get weight on it, so we're looking at not having it until next June or so. That's 8 months without pork and that just ain't gonna fly! So off to searching for a pig...

  1. So here's what I constantly worry about. If you stock up all of this meat in the freezer and are without power then what? Of course I live in Florida where we are without power a lot...Are you preserving it n any other way?

  2. We don't really lose power all that often here...not enough to make a difference really. We just don't get storms like you guys do. Our only threat is earthquakes, but even those big enough to knock out power don't occur more than every few decades. But just this morning I was thinking about turning some of it into jerky. I also know how to can it if we need to. I want to learn how to smoke it and salt it as well.

  3. I realized when I asked that your experiment (for lack of a better word) wasn't all about survival...i'm just inclined that way and the mind always wanders towards these questions! We recently lost the use of water and toilets when they were working on our sewer lines and as prepared as I thought I was!

  4. Survival is definitely important though because no matter where you live there are disasters. We're due a big earthquake soon. Our last big one was in '89 and they said to expect the next one within 20-30 years. Well, we're past the 20 year mark....
